The Best Shampoo and Conditioner. for thick and poofy hair?

I have thick black, layered hair. I also have poofy hair. Is there any kind of Shampoo or Conditioner that can keep my hair flat? I have a great straightener and it works well. But sometimes, even after straightening it, that one spot in my hair near my right ear poofs up.
