It sepends on the brand but it will probably get on your pillow

Yes you can sleep with the spray in. Yes it will get all over everything. It most likely will take a really long time to wash out of your hair as well. I used some spray can in my hair one halloween and I was in the shower waiting for my hair to run clear for close to a half hour. Then I went to bed with medium dry hair and woke up with pinkish red all over the pillow case and t shirt I slept in. I won't be using it again. If I really want my hair to be something funky it will only be a few strands or a wig. I would suggest the same to you or just be very careful and very patient waiting in the shower.
